CHia jam

Ridiculously simple, ridiculously delicious. Processed/refined sugar and preservative free, and yet still tastes incredible with your peanut butter toast. Need I say more?


  • 2 cups of any frozen berries you like
  • 1-2 tbsp organic rice malt syrup (or maple syrup/honey)
  • A healthy squeeze of fresh lemon juice
  • 2-3 tbsp chia seeds


Heat the berries gently in a pan to thaw. Add the sweetener after a few minutes, then mix and heat until the berries are soft. At this point you can mash, blend, or simply leave as they are depending on the jam consistency you like best. This time, I went for blending. Squeeze in the lemon juice, spoon in the chia seeds, mix it all up and leave it for 10 minutes to thicken and cool. Pop in a jar, and keep it in the fridge. Takes 20 minutes tops!
