Colourful coleslaw

I LOVE red cabbage coleslaw. I was never a huge fan of the shop-bought mushy white stuff, but when gourmet burger joints started serving us the crunchy, creamy red cabbage variety, I was hooked. Unfortunately, it was often full of sugar, vegetable oils and nasties, so I decided to come up with a fresh homemade version I could enjoy whenever I wanted.

A definite staple dish for me this summer, this coleslaw is crunchy, flavoursome, dairy free and healthy! Take it to a barbecue with you in place of the shop bought, mayonnaise drowned version to enjoy guilt free. It also works really well with my crustless quiche; perfect summer dinner in the garden.


  • 1/2 red cabbage, sliced as thinly as you can. A sharp knife is a must!
  • 1 grated courgette
  • 1 finely sliced red onion
  • 2 grated carrots

For the dressing:

  • 1/4 cup apple cider vinegar
  • 1/3 cup + 1 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1/4 cup tahini
  • Plenty of salt & pepper
  • Sesame seeds 


  • Mix all the veg together
  • Mix up the dressing
  • Combine well
  • Sprinkle with sesame seeds 

That's really all there is to it!
