Pb&J Protein Ice Cream
OK, so Scotland isn't exactly sweltering even in the summer, but we all enjoy a cheeky ice cream here and there even so! But ice cream is FULL of sugar as well as usually having some other questionable ingredients too (mostly oils and nasty flavourings). I even tend to steer clear of the banana ice cream or 'nicecream' that you often see on Instagram, as I'm not convinced that my body needs that many bananas in one sitting ( - natural sugar is still sugar so it's best not to overdo it).
This ice cream is vegan, high protein and full of healthy fats and antioxidants. It's also free of refined sugar, low in natural sugars and - wait for it - contains AT LEAST 2 of your 5 a day, one of which is a vegetable! You can't taste the cauliflower at all, but it adds a great texture and a good dose of vitamins to this bowl. This is great as a dessert, but it's so healthy that I happily eat it for breakfast regularly, usually topped with some nuts or chia seeds.
Ingredients (serves 1 as a meal or 2 as a snack/dessert):
- 1 cup frozen cauliflower
- 1 cup frozen mixed berries
- 1/3 frozen banana
- 1-2 tbsp peanut butter
- 1-2 tbsp hemp protein powder (or your protein of choice)
- 2 pitted dates (optional)
- Splash of nut milk as needed
- Toppings of choice (I used pecans)
Blend: your mixer might go a bit crazy at first but have faith (and add some liquid if it's really struggling), it will get there! Once you have a thick, creamy, incredibly delicious consistency, it's ready. Serve immediately as a sort serve ice cream (that's how I like it best) or pop in the freezer for more of a sorbet consistency.
Pairs well with Scottish sunshine, if you can find any!
